Recipe: Marinated Kale & Veggie Salad with Cashew Dressing
Hi friends! It’s been a super-busy fall (and now winter here in Minnesota with our subzero temps!), so it’s been a while since I’ve posted a new recipe. Fear not, I’m here today to share this delicious taste of summer to keep you fresh & healthy this winter.
This marinated kale salad is one of my favorite things to make, and, bonus – it’s super-simple! It is vegan, gluten-free, and made from simple, whole foods. The best part is it is bursting with flavor and you can even add your own flair to it by mixing up the veggies and other things that are thrown into the salad.
Marinated Kale & Veggie Salad with Cashew Dressing

Kale & Veggie Salad
- 1 bunch of Kale
- 1 Bell Pepper, diced
- 1-2 Carrots, diced
- 1/2 Cucumber, diced
- 1/4 Onion, diced
- 1/2 cup Walnuts, chopped
- *Other veggies of your choice
Cashew Dressing
- 1 cup Cashews
- 2-3 cloves Garlic
- 1-2 tablespoon Lemon Juice
- 1/2 cup Water
Instructions
- 1.) Wash & prep all ingredients
- 2.) Tear pieces of kale off stem and into a large bowl
- 3.) Make cashew sauce by adding cashews, garlic, lemon juice, and water to food processor. Process until smooth & creamy
- 4.) Add cashew dressing to kale in bowl and massage until well-combined
- 5.) Add diced veggies to kale & cashew dressing and massage all together once more
- 6.) Let set in refrigerator for 30 min - a few hours to allow flavors to settle
