If you’re anything like me, you like to get your day started right with a healthy breakfast. That way, if I eat pounds of chocolate or cheese later on in the day, I can at least rest easy knowing that I had something nutritious that day.
This recipe for a blueberry flax smoothie is what I’ve been loving lately. I sort of made it up one day with some ingredients that I know and love, and it’s very simple but packed with lots of top names on the super food list.
Here is the lovely short & sweet recipe card version:
- 10 oz Coconut Milk
- 3/4 - 1 cup frozen Blueberries (Wild or Organic)
- 2 tablespoons ground Flaxseed
- 1/2 - 3/4 Banana (Organic)
- 1 cup Spinach (Organic), loosely packed
- 1.) Pack all ingredients into blender
- 2.) Blend until creamy
- Yields 16 ounces
And for the visual learner, the step-by-step photographic version:
1.) 10 ounces coconut milk
2.)3/4-1 cup blueberries – I use frozen, wild blueberries
3.) 2 tablespoons ground flaxseed – I start with whole and grind just prior to making the smoothie
4.) 1/2 organic banana
5.) 1 cup loosely packed organic spinach
What is so wonderful about making smoothies is you can make something healthy, raw, and packed with wholesome goodness in no time!
And that makes the play-by-play pretty much one – okay two – steps: Ready . . .
1.) Pack all into blender (I suggest putting the coconut milk in first)
This will yield about a 16 ounce smoothie
